It feels good to eat well (and healthy)

Cooking feeds your body, mind, and soul. It allows you to control the food you put into your body, connect with your family and friends over a home cooked meal, and save the money you might otherwise spend in restaurants or on processed, prepackaged foods. Believe it or not, making simple and satisfying meals from scratch doesn’t have to be hard. Here are some of my favorite easy, healthy recipes. You’ll find that eating well can also be delicious!

Chocolate Covered Pomegranate
 
Ingredients:
2 pomegranates (seeds only)1 10 oz bag of high quality organic dark chocolate
 

Directions:

  1. Melt chocolate on stove.

  2. Mix in pomegranate seeds until fully covered in chocolate.

  3. Spoon out in droppings onto a parchment lined baking sheet.

  4. Place in the refrigerator for at least 1 hour.

Yields:

Tofu Whipped Cream
 
Ingredients:
1 package silken tofu
3 tablespoons maple syrup
1-2 teaspoons vanilla extract
1-2 tablespoons almond or cashew butter
 

Directions:

  1. Blend all ingredients into a blender or food processor until smooth.

  2. Place in fridge to chill.

Maple Fruit Compote with Honey-Ginger Toasted Nuts
 
Ingredients:
2-3 apples
2-3 peaches or pears
2 tablespoons maple syrup
1/2 cup raisins
juice of 1 lemon
1 teaspoon cinnamon
1 cup walnuts or nuts of your choice
1/2 teaspoon fresh ginger, minced
2 tablespoons honey
 

Directions: 

  1. Wash, core and chop fruit into slices or chunks.

  2. Place in a large saucepan with 1/3 cup of water. Add the maple syrup and raisins.

  3. Cook over medium heat, stirring occasionally, for 10 minutes.

  4. Add lemon juice and cinnamon. Cook for another 10 minutes, until soft.

  5. While fruit is cooking, place chopped nuts in a skillet over medium heat and toast, stirring often, for 5

  6. minutes.

  7. Drizzle honey over the nuts and add ginger, but keep stirring since the honey can easily burn.

  8. Top warm fruit with toasted nuts and enjoy!

Mango Cream
 
Ingredients:
1 mango, peeled and diced
1/4 cup orange juice
1 tablespoon lemon juice
1 tablespoon agave nectar or a few drops of stevia (optional)
1 cup organic whipping cream or non-dairy whipping cream, OR a carton of soft tofu OR a large ripe banana
 

Directions: 

  1. Process the first four ingredients in a blender.

  2. Blend for one minute, or until pureed.

  3. Pour puree into a medium bowl.

  4. Beat whipping cream at medium speed with an electric mixer until soft peaks form. If using tofu or banana, whir in a food processor or blender until smooth and creamy.

  5. Fold whipped cream, tofu, or banana into mango puree, using a knife to swirl in a marbled effect.

Do-It-Yourself Sweet Sesame Treats
 
Ingredients:
1 cup raw sesame seeds
1 TBS cacao powder
¼ tsp cinnamon
Pinch of sea salt
¼ cup raw honey
2 TBS raw tahini (found in the ethnic food aisle at your grocer's; stir before using)
1 tsp natural vanilla extract 
 

Directions: 

  1. Put the sesame seeds in a food processor and blend until medium-coarse, 60-90 seconds. Pour into a large mixing bowl.

  2. Add the cacao, cinnamon and salt; blend well with a large spoon.

  3. Drizzle the honey, tahini and vanilla over the dry mix.

  4. Using your hands, mix and knead the ingredients until it is a blended, granular, stiff dough.

  5. Take about a tablespoon's worth of dough and form it into a one-inch ball. Repeat with the remaining dough.

  6. Makes about 22 balls; store in a sealed container in the refrigerator for three weeks, or in the freezer for up to six months.

Nutella-Joy Balls
 
Ingredients:
2 cups dates soaked in warm water for 20 minutes
1 cup hazelnuts or almonds
1 cup walnuts
2 tablespoons coconut oil
1/2 cup unsweetened coconut shreds.
 

Directions: 

  1. Blend all ingredients (except the coconut shreds) together.  

  2. Roll into balls using wet hands.  

  3. Roll the balls unsweetened coconut shreds.

  4. Freeze.

  5. Enjoy!
