It feels good to eat well (and healthy)
Cooking feeds your body, mind, and soul. It allows you to control the food you put into your body, connect with your family and friends over a home cooked meal, and save the money you might otherwise spend in restaurants or on processed, prepackaged foods. Believe it or not, making simple and satisfying meals from scratch doesn’t have to be hard. Here are some of my favorite easy, healthy recipes. You’ll find that eating well can also be delicious!
Dulse Dressing
Ingredients:
1/2 cup water
2-3 tablespoons tahini (sesame paste)
1 tablespoon umeboshi paste
1/2 cup dulse flakes
3 scallions, finely chopped (optional)
Directions:

Warm the water, add tahini and stir until creamy.

Stir or blend in umeboshi paste. Mix thoroughly.

Stir in dulse and/or scallions.

Nori Ginger Tofu Scramble
Ingredients:
3 sheets nori
1 tablespoon oil
1 package tofu
1 teaspoon freshly grated ginger
2 tablespoons nutritional yeast
1 teaspoon tamari
Directions:

Cut nori sheets into very thin one inch strips (scissors work best).

Heat oil in a skillet.

Crumble tofu and add to skillet once oil is heated

Simmer until tofu is heated

Stir in nori, ginger, nutritional yeast and tamari.

Cook for 5 more minutes or until fully heated through.

Sprinkle on toasted sesame seeds for added flavor.
